And if there’s enough meat left, or if, like me, you plan for a few extra lobsters, the lobster roll is perfect. Lobster generously mixed with fresh ingredients, placed in a butter-golden brioche bun: that’s a lunch that tastes like a vacation in the Islands! Enjoy it on the terrace, on a picnic, or after a day at the beach. Here’s my recipe for lobster rolls… well-filled or very well-filled!

Lobster Roll
What you need
For 4 or 6 lobster rolls, depending on whether you want them well-filled or very well-filled!
- Lobster – Meat from 3 steamed lobsters, at least one of which is female for its roe, shelled and cut into pieces (keep the claws whole for decoration)
- Celery – 2 stalks, diced
- Green onions – 2 (white and green parts), finely chopped
- Parsley – 3 or 4 sprigs, finely chopped
- Homemade mayonnaise – 2 to 3 tbsp, to taste
- Alcyon salt and pepper – to taste
- Brioche hot dog buns – 4 or 6
- Softened butter – 2 tbsp
- Lettuce – 4 or 6 leaves
- Lobster roe – a few grains for decoration
Preparation
- In a bowl, gently mix the lobster meat, celery, green onion, and parsley with the mayonnaise. Season with salt and pepper and keep chilled.
- Butter the outside of the buns. Brown them on each side over medium heat in a non-stick pan.
- Once the buns are lightly golden, let them cool slightly, then open them and add a lettuce leaf before filling them with the lobster mixture.
- For the finishing touch, place the reserved claws and a few grains of lobster roe on top of each lobster roll for decoration.
